Gallipoli underground oil mill

The urban development of the historic center reflects that of all the coastal centers, in particular those like Gallipoli, constantly beaten by the wind and hence the need for narrow and twisted streets.

Walking through these narrow alleys you will come across small doors that, when you cross them, will make you discover an underground city. You will enter a past that few know, when Gallipoli was the world capital of lamp oil, lamp oil, used to illuminate the great centers of Europe.

The olives used to produce the oil were discharged directly into the mill from a hole in the vault.
The choice of creating underground oil mills allowed the product to be kept at a constant temperature of about 17 ° and the olives did not risk moldy, as was the case in surface oil mills due to sudden changes in temperature.
